Denim, Tunic Sweater, & A Tote

This look is one of my favorite go-to weekend looks!  The layers are perfect for the cold temps and it's a super comfortable look that's also practical when out with our kiddos & running errands.  The sweater that I'm wearing is a tunic sweater and all though sold out, I've found a similar one here and here.  Tunic sweaters are perfect for layering and everyone should have a couple in their wardrobe.

And this TOTE...I swoon every time that I carry it.  It's just absolutely stunning and although it is a bit of a higher price point, it is one of those totes that you will have for YEARS.  It's oversized style and shape offers a ton of room to carry all of your weekend essentials.  This would make a great carry on bag as well or even a quick over night bag if you don't pack your whole bathroom like I tend to do sometimes.  It's a great investment piece for sure!

Blush Bell Sleeve Sweater

Bell sleeves are in and they are here to stay.  What I love most about this soft blush sweater is the subtle bell sleeve.  I also love that it is chunky, a bit oversized, and has a turtleneck.  Our winter months have officially kicked off in Nashville so sweaters and jeans is what I will be living in over the next few months.  In my opinion, the more cozy the better and this sweater gets an A+ for all of those reasons.

You may have noticed that I've been wearing this particular black pair of distressed jeans rather often and that's because I LOVE them.  They are super stretchy and very flattering.  They are more of a washed black versus a rich black, which gives them a more "worn in" appearance.

Bacon Wrapped Chicken & Avocado Zoodles - Whole 30 Recipe




If the title of this post didn't make your mouth water, I'm not sure what will!  Anything with the word bacon or avocado in it reals me in EVERY. SINGLE. TIME!

One of my favorite recipes to make while on Whole 30 is The Wonky Spatula's Avocado Zoodles so Jenn of Carolina Girl Cooks and I teamed up to recreate this crowd pleasing favorite.  We've put our own twist on this recipe and instead of putting bacon in the zoodles, we've wrapped chicken breasts in bacon.

What I love about this slight tweak to such a great recipe is that the avocado zoodles are served as a side dish instead of the main feature of your meal.  They are such the perfect compliment to the bacon wrapped chicken.

Either way, you can't go wrong with this delicious combo!  Both the chicken and the avocado zoodles are simple and quick to make.  I love flavorful recipes that don't require a ton of work.

Ingredients

  • 4 small chicken breasts
  • 1 package of bacon (whole30/paleo compliant)
  • 4 small zucchinis or 2 large
  • 1 ripe avocado
  • 1/2 tsp of garlic powder, divided
  • 2 Tablespoons of olive oil
  • juice of 1/2 lemon
  • 1 Tablespoon of fresh parsley
  • 2 Tablespoons of water
  • salt and pepper
  • cherry tomatoes
  • 1/2 cup of pine nuts
  • *Special Equipment: Spiralizer

Instructions

  1. Preheat the oven to 350 and line a baking sheet with aluminum foil.
  2. Rinse the chicken breasts under cold water and pat them dry with a paper towel. Sprinkle both sides of each breast with a little salt, pepper and garlic powder.
  3. Wrap each piece of chicken with 3-4 pieces of bacon and place on the baking sheet.
  4. Bake the chicken for about 30 minutes or until the bacon has gotten crispy around the chicken. Remove from the oven and let it stand for a few minutes before slicing.
  5. While the chicken is baking, toast the pine nuts. Heat up a small skillet to medium heat and add the pine nuts. Toast just until they become brown and fragrant.
  6. Next, wash the zucchini and cut the tops and bottoms off each. Sprialize them into noodles. Choose whatever thickness of "noodle" you'd like. Sprinkle the zoodles with a tiny bit of salt and set them aside in a mixing bowl while you prepare the sauce.
  7. In a small food processor, add the avocado, parsley, 1/4 teaspoon of the garlic powder, olive oil, lemon juice, water and a sprinkle of salt and pepper. Blend until it's a pourable sauce. Taste it to adjust the seasoning if need be. Pour about half of the sauce over the zoodles and toss to coat. Add more if you need more.
  8. To serve, plate 1/4 of the zoodles on a plate. Top with sliced cherry tomatoes and sprinkle with the toasted pine nuts. Slice the bacon wrapped chicken and serve on the side of the zoodles.

Head & Shoulders "Instant Relief" Shampoo - My Experience

During the winter months, my skin tends to dry out a good bit, including my scalp and sometimes it can be painful and itchy.  Does anyone else experience this?  I also find that when I work out in the winter months, sweat causes my scalp to become even more irritated.  So I always have to switch my routines up.

I've used Head & Shoulders shampoo & conditioner on and off for years but I've most recently found that it has really helped soothe my dry, itchy scalp.  When Head & Shoulders approached me about trying their Instant Relief Shampoo with peppermint complex and tea tree essence, I immediately said YES PLEASE!  I actually already had some of their classic clean shampoo and conditioner in my shower and I had started making the switch in hopes of getting relief from my dry and itchy winter scalp.

What I love most about their Instant Relief Shampoo is that it immediately feels cool on your scalp (that's the peppermint complex) and it smells soooooo good!  When using this shampoo I feel immediate relief and my scalp feels calm and much less itchy...it's very soothing.  My hair also feels moisturized and soft too!

I've decided to keep this shampoo on hand and in my gym bag as well.  When faced with washing my hair after a sweat session, this will be my go-to shampoo.  I definitely recommend washing your hair with this after sweating throughout a workout.  It will leave your hair feeling so clean plus it will alleviate that unsettling itchy feeling.  Your gym girlfriends may just be asking if they can use it too!

What's not to love about a comfortable and chic pair of knee high boots that are also super affordable?!  Nothing!

Sweet Potato Patties - Whole 30 Recipe

Sweet potato bites or sweet potato patties are one of my favorite things to make while on Whole 30.  Jennifer of Carolina Girl Cooks and I teamed up today to make sweet potato patties, which was inspired by the sweet potato bites that I've made from The Wonky Spatula.

These are not only wonderful for breakfast but they are great snacks throughout the day too.  I've even eaten these for lunch with a side spinach salad.  They are just so yummy and obviously so good for you too!

Ingredients

  • 2 sweet potatoes
  • 1/2 cup of chopped green pepper
  • 1/2 cup of chopped red onion (you can use any other onion as well)
  • 1 clove of minced garlic
  • 1 tablespoon of oregano
  • 1 teaspoon of cumin
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of paprika
  • 2 eggs
  • 1/2 cup of almond or coconut flour, if needed
  • salt and pepper to taste
  • olive oil
  • Instructions

    1. Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil and cut the ends off the sweet potatoes. Place the sweet potatoes on the baking sheet and bake the potatoes for about 45 minutes to an hour or until they are cooked through. Remove them from the oven and allow them to cool.
    2. While the sweet potatoes are cooling, heat up a skillet to medium heat and add about 1 tablespoon of olive oil. Add the onion, spices and a sprinkle of salt and pepper and cook for about 5 minutes until the onion begins to soften.
    3. Next add in the chopped green pepper, another sprinkle of salt and pepper and cook for another 5 minutes. Add the garlic and cook for 1 minute. Allow the mixture to cool.
    4. When the potatoes are cool enough, peel their jackets off, place them in a bowl and mash them up a bit. Add in the onion and pepper mixture, eggs and another sprinkle of salt and pepper. Stir to combine.
    5. If the mixture is thick enough, proceed to the next step. If not, add about 1/4 cup of the flour to the mixture to thicken it. You should be able to form a patty and the mixture stay together and not be too sticky.
    6. Form patties with about 1/3 cup of the mixture. Place them on a plate and continue forming the patties until all the mixture has been used.
    7. You can cook them one of two ways. Method 1: Heat up a skillet with about 1-2 tablespoons of oil to medium-high heat. Place a few of the patties in the skillet and cook for about 5-7 minutes on each side. Repeat until all the patties have been cooked. Method 2: Place on a parchment lined baking sheet and bake at 350 for about 20-25 minutes, flipping halfway through so that they brown on both sides.
    8. Serve with whole30 compliant bacon and eggs however you like them.
    9. **If you double the recipe to freeze the other half, make sure you cook the patties through and cool them completely. Wrap them individually in plastic wrap and then place them a freezer safe plastic bag. To thaw, leave them in the refrigerator for a couple of hours to overnight and reheat them by the skillet method or by the oven method.

Black Velvet Lace Top - TART Collections

Happy New Year!  Cheers to a wonderful year ahead and I wish you all a year full of love, health, happiness and whatever your heart may desire!  Peter and I were talking about new year's resolutions last night and when he asked me to share some of mine, I simply said, "to use less paper towels".  Ha!  I was kind of kidding but not really...I REALLY need to use less because we are constantly going through our paper towel rolls.

Using less paper towels is one of MANY resolutions that come to mind but in reality, I don't usually "formally" make a resolution.  At least those that I state out loud and share with the world...I'm not a new year, new me person.  There are a lot of things I aspire to do, to be better at, to create, to see etc, etc...the list could go on for miles.  At the end of the day, it comes down to being the best "ME" that I can possible be and well (using less paper towels ;-)).

From a style perspective, I aspire to take a more minimalist approach this year.  I love the way minimalism looks & feels...kind of a less is more mentality.  We will see how that goes.

So I'm kicking off this year with a simple black on black look.  This beautiful black velvet lace top from Tart Collections is so stunning that it doesn't need anything more than to be paired with a relaxed pair of distressed black denim, a gorgeous pair of red patent leather heels, and a classic black on black watch.  I absolutely adore Tart Collections beautiful pieces...they are simple, versatile, and minimal while still making a statement.
